Astral Tequila is made with 100% organic Blue Weber Agave sourced from a mountainous estate at the western edge of Jalisco, Mexico and is hand-crafted using methods reminiscent of the way tequila was produced 150 years ago. Astral Tequila is totally unique and reminiscent of the way tequila was made 150 years ago before it was industrialized. We hope you enjoy our celebration of this beautiful culture and spirit. Astral is made from agave grown at high-altitude on a single organic estate in the mountains. The agave are harvested and roasted in a traditional stone oven. Native yeast fermentation takes 8x as long as conventional fermentation. We ferment with all of the bagazo (solids) to better highlight what the agave plant has to share. After fermentation Astral is pot distilled two times to reach 92 proof. Built over 70 years ago, La Cofradia is a traditional industrial distillery that uses hornos (brick ovens), molinos (the style that is more like a grape crusher/destemer), natural fermentation, and stainless steel pot stills (with copper tubing). This is as acceptable a blanco Tequila as Ive had the delight of endeavoring. Too gritty and vegetal with ready green pepper on the sense of taste yet not close to as much warmth from the additional confirmation as I suspected. The extra ABV goes directly toward the flavor which is extremely fulfilling. This is an easy decision for any tequila mixed drink and a fine sipper too. Happy I took a flyer on this one. Certainly suggested.

Tasting Notes

Nose

Aromas of cinnamon, pepper, and spice, with minerals, and a musty aroma, with citrus, vegetal, floral and some anise (licorice) notes.

Taste

It has a potent taste with a hot cinnamon presence and a musty, sharp, mild fruit, citrus and spice presence, along with some sweet agave notes. It is pleasant enough to sip, but in a hi-proof cocktail, this agave sweetness and alcohol punch, would cut through the mixed flavors and add a tasty zest.
