Distilled from local molasses, it's been aged for one year in freshly emptied American white oak barrels that previously held Laws Colorado whiskey. I thought this was extraordinary in a manhattan. Dry practically like a liquor however with an increasingly vegetal funk that places me as a primary concern of some Rhum Agricoles - not an amazement considering their refining procedure.

Tasting Notes

Nose

The nose offers a very buttery, creamy profile, with toffee, popcorn and nuttiness, along with lighter touches of hay and grass.

Taste

The palate showcases a lighter strain of those buttery-creamy notes, to go with honey, earthy and mineral flavors, and sugarcane.

Finish

The finish is very short, leaving roast and molasses flavors in its wake.
