Two great distillers have collaborated to create an extraordinary taste profile for the fifth offering in Parker’s Heritage Collection – Parker Beam, Heaven Hill Distilleries’ 6th generation Master Distiller & Alain Royer, innovative French Cognac blender. Their product: Cognac Finished Kentucky Straight Bourbon Whiskey. Royer’s long family history and expertise in the French Cognac industry aided in the selection of two-to-three-year-old Limousin oak casks from the House of Frapin. The Grande Champagne Cognac, which had aged in those casks, permeated the wood with it’s very light, floral and evanescent bouquet. Meanwhile, Parker Beam carefully hand selected a very limited number of the finest, super-premium barrels of 10-year-old Bourbon. The Bourbon was then finished for six months in Limousin oak casks to take on some of the Cognac’s characteristics. Bottled without chill filtering to preserve the unique taste and aroma, this Cognac finished Bourbon is a rare treat for every Bourbon collector. This series of limited edition American straight whiskeys is a tribute to innovative and honored 6th generation Master Distiller Parker Beam who has been distilling, aging, and selecting critically acclaimed American whiskeys since joining Heaven Hill in 1960.

Shading - dim for its age; mahogany or walnut colored and clear. NOSE - molasses fruits and sugar coated orange strips; overwhelming cognac smell for the 4 months Parker Shaft said it matured (versus the a half year noted on the jug); smells more like a treat wine than a whiskey generally speaking very charming. TASTE - after you move beyond the sweet nose and turn this over on the sense of taste this turns around to its underlying foundations; the cognac is as yet present yet it suggests a flavor like bourbon - high smoke scotchy; hot yet strangely not sweet or cinnamon hot; oak and rye are featured. FINISH - slow waiting completion; not brutal but rather not excessively smooth; light cinnamon heat and stewed plums. A while later the glass smells like dull chocolate secured dried fruits. By and large - this is a special pour and is sure to be popular or even venerated by the general bourbon sweetheart. To the whiskey perfectionist this isn't a jug I would suggest buying - it has an over the top cognac impact and there are better whiskey" speculations to be made. I do prescribe tasting to any individual who finds the opportunity as it is a mind boggling and done bourbon."

Nose
Structured and well rounded. The layers of flavor peel back like an onion. First, syrupy toffee sauce is brightened with candy apple, and dates over an undercurrent of warm spices (clove, nutmeg, and a gentle hum of chili). There’s a welcomed bitterness from the barrel as well.
Taste
Long, sweet, and well spiced. Rum raisin, chewy caramel, and spicy warmth remain.
Finish
Oak, leather, and a hint of smokiness.
